Maxime Ejoff – Restaurant Manager

Maxime was born in Burgundy, France. After important experiences in Michelin-starred restaurants such as “Restaurant La Madelaine” in France and “Alain Ducasse at the Dorchester” in London, Maxime was looking for new challenges and felt ready to move to Asia at 8 ½ Otto e Mezzo BOMBANA Shanghai.

In 2013, this adventure brought him to Hong Kong, working as Assistant Manager to Antonio Bombini and Tony Wong. Recently promoted to Restaurant Manager supported by his co-worker Alan Lam.
