Antonio Bombini

Antonio Bombini, originally from Bisceglie, in Southern Italy, has grown up in his family’s restaurant, discovering a huge passion for fine dining.
After working in several 5 stars hotels in Italy, moved to Monaco when he has been working at Restaurant Joel Robuchon Monte-Carlo in prestigious Hotel Metropole within 4 years, becoming a Maitre d’Hotel.
A new challenge led him to Hong Kong, when he joined Chef BOMBANA and the Gm Danilo as Assistant Manager.

Starting from January 2012, Antonio moved on and was promoted Restaurant Manager, thanks to his great communication and professional skills supported by his co-worker Tony Wong.

 

Tony Wong

Tony Wong, from Hong Kong, started his adventure in Restaurants at Petrus, in Island Shangri-La in Hong Kong. He has been working there from 2000 to 2006, before moving in Joel Robuchon’s starred restaurant in Hong Kong.
His passion and knowledge of wines and fine dining helped him to join the 8 ½ Otto e Mezzo BOMBANA team in 2010, where he worked as Assistant Manager until December 2011.

Starting from January 2012, Tony moved on and was promoted Restaurant Manager, thanks to his great communication and professional skills supported by his co-worker Antonio Bombini.

 

Leo Kwong

Leo Kwong was born in Hong Kong. After his studies, he worked for several hotels, as Hotel Nikko (front desk), Kowloon Hotel (in Human Resources) and Royal Plaza Hotel, before arriving at Ritz-Carlton, where he met Chef BOMBANA and Danilo. He followed this one for the opening of Domani Italian Restaurant, and then he helped them opening 8 ½ Otto e Mezzo BOMBANA, where he is one of Danilo’s Assistant, also in charge of HR and trainings.
