Danilo Nicoletti originally from Ventimiglia – Italy has worked in top restaurants around the world such as “Le Grill” Restaurant at the mythic Hotel de Paris and Restaurant “Joël Robuchon” at stylish Hotel Metropole in Monte Carlo as Maître d’ Hotel.

Former General Manager, he represents and manages today all Chef Umberto Bombana’ s restaurants as Executive Director of Food & Beverage. In Hong Kong, Danilo has also gained his title as the city’s reputable sommelier, managing wine sessions not only in 8 ½ Otto e Mezzo BOMBANA Hong Kong and Shanghai, but also in other restaurants of the group. With a strong passion for wines, especially Italian, Danilo is proud to lead these chic venues, along with his loyal team of well-trained professionals.
